About the recipe
A floral, blush-pink mocktail that's tart, fragrant, and utterly refreshing. The classic Paloma gets a seasonal spring makeover with little batch Rhubarb & Rose syrup.

Ice
25ml little batch Rhubarb & Rose syrup
25ml non-alcoholic tequila (or just leave it out)
Just a squeeze of fresh lime
75ml Fever Tree pink grapefruit soda OR 25ml fresh pink grapefruit juice
50-75ml soda/sparkling water
Garnish ideas: lime wheel, grapefruit segment, rose petals, sprig of rosemary.
Fancy a cocktail? Tequila is the usual spirit in a Paloma. If that's not your thing, then a shot of gin or vodka.
Optional extras:
A little salt will enhance the citrus flavours - you could rim the glass.

Method
If salting the rim, run your cut lime around half the rim of the glass and then dip the glass lightly in sea salt
Add ice
Add the spirit or non alcoholic alternative, if using.
Add the citrus elements - a squeeze of lime and grapefruit juice or grapefruit soda
Drizzle in the syrup
Top with soda/sparkling water
Stir, garnish and enjoy!
