Rhubarb & Rose Virgin Paloma

About the recipe

A floral, blush-pink mocktail that's tart, fragrant, and utterly refreshing. The classic Paloma gets a seasonal spring makeover with little batch Rhubarb & Rose syrup.

Ingredients

Ingredients

  • Ice

  • 25ml little batch Rhubarb & Rose syrup

  • 25ml non-alcoholic tequila (or just leave it out)

  • Just a squeeze of fresh lime

  • 75ml Fever Tree pink grapefruit soda OR 25ml fresh pink grapefruit juice

  • 50-75ml soda/sparkling water

  • Garnish ideas: lime wheel, grapefruit segment, rose petals, sprig of rosemary.


Fancy a cocktail? Tequila is the usual spirit in a Paloma. If that's not your thing, then a shot of gin or vodka.


Optional extras:

A little salt will enhance the citrus flavours - you could rim the glass.



Preparation

Method

  • If salting the rim, run your cut lime around half the rim of the glass and then dip the glass lightly in sea salt

  • Add ice

  • Add the spirit or non alcoholic alternative, if using.

  • Add the citrus elements - a squeeze of lime and grapefruit juice or grapefruit soda

  • Drizzle in the syrup

  • Top with soda/sparkling water

  • Stir, garnish and enjoy!
