25ml-50ml little batch Chai Spiced Plum Syrup (depending on your preference for sweetness - start with 25ml and add more if needed)
Juice of a half a lemon
One egg white or - for a vegan version - 50ml aquafaba*
Crushed ice.
A single measure of gin or vodka if you're making a cocktail.
Garnish ideas:
Edible flowers, frozen plum slices, a slice of lemon.
*Aquafaba is the liquid from a tin of chickpeas, often used as an egg substitute in vegan baking and cocktails. I strain it off, freeze it in ice cube trays and once set keep in a bag in the freezer to defrost as and when I want to use it. It's easier to get a smoother consistency with aquafaba than egg white (less shaking required!)
If you'd rather leave the egg white or aquafaba out, you could make this into a non-alcoholic Chai Plum & Lemon Spritz by just adding 50ml of sparkling water once the drink has been poured.
Preparation
Method
Add 25ml of the syrup, all of the lemon juice, egg white or aquafaba (and spirit if using) to a cocktail shaker along with the crushed ice.
Make sure it's closed and then give it a good shake (if using egg white you’ll need to shake for longer to make sure it has been liquidised effectively).
Pour over a strainer into a short glass.
If you're not using egg white or aquafaba, add your sparkling water now.
Give it a taste and check if the sweetness is to your liking - add a little more syrup if needed.
Garnish.
