Spiced Elderberry & Hibiscus Cooler

Prep Time:

One to make ahead! The hibiscus infusion takes five minutes to prepare and is then left for at least four hours to develop. The mocktail then takes just five minutes to make.

About the recipe

This wonderfully versatile recipe works brilliantly as both a mocktail and a mock toddy, making it perfect for the changeable autumn weather! It’s deliciously cooling in the late autumn sun or warm and comforting by the fire.

  • Ice

  • 25ml little batch Spiced Elderberry Syrup

  • A serving of dried hibiscus (1 generous teaspoon/around 3g)

  • A squeeze of fresh orange or 15ml orange juice

  • Soda or sparkling water

  • Dried orange wheel and dried hibiscus to garnish

Method


Prepare ahead:

Prepare a cold infusion of hibiscus petals by adding the dried hibiscus to 200ml cold, fresh water, give it a swirl and leave in the fridge overnight (or at least four hours).


Then:

  • When ready, strain off the hibiscus.

  • Add ice, Spiced Elderberry Syrup and orange to a glass.

  • Add 150ml to 200ml of hibiscus tea.

  • Top with soda or sparkling water.

  • Stir, garnish and enjoy!
